Somos Ekaterina y Pancho

Somos Pancho y Ekaterina, y llevamos más de diez años viviendo dentro del mundo del café desde muchos ángulos distintos. Fuimos dueños de cafetería, trabajamos detrás de la barra, atendimos a cientos de personas al día, nos equivocamos muchas veces, aprendimos a la fuerza y con el tiempo también nos metimos en el mundo técnico de las máquinas, los molinos y el espresso desde dentro. Ekaterina es economista de formación, y eso marcó mucho su manera de aprender y de enseñar. No le basta con saber que algo se hace de una manera; necesita entender por qué funciona así, qué hay detrás de cada proceso y cómo todo se conecta. Pancho, en cambio, es profundamente práctico y observador. Ve detalles que muchos pasan por alto y tiene una intuición muy fuerte para entender cómo funcionan las cosas en la realidad. Juntos encontramos un equilibrio entre pensamiento y acción que terminó convirtiéndose en la base de todo lo que hacemos hoy. De esa combinación nació “Que Chucha Hago”. No como un curso para repetir recetas, sino como una formación para que puedas trabajar con una cafetera real sin miedo, con criterio y con respeto por la máquina, el café y las personas. Todo lo que enseñamos aquí viene de nuestra propia experiencia, de años de barra, de errores, de pruebas, de máquinas abiertas y cerradas, y de muchas preguntas que seguimos haciéndonos hasta hoy. No creemos en verdades absolutas ni en dogmas, creemos en observar, probar, entender y volver a ajustar. Eso es exactamente lo que queremos compartir contigo en este camino.
